For the caramel filling:

1 heaped tbsp concentrated pear juice or maple syrup

For the chocolate cream:

40 g/⅓ cup lightly defatted cocoa powder

75 g/6 tbsp refined coconut oil, melted

1 tbsp concentrated pear juice or maple syrup

30 ml/2 tbsp agave syrup or 25 g/¼ cup sifted icing sugar

2 untreated oranges for grated zest and juice (total 200 ml/scant 1 cup)

25 g/2 tbsp white almond butter
